The arghya is offered standing in water, facing the sun as it sets, from a bamboo soop or daura holding fruit, thekua and sugarcane. This is the moment most people mean when they say "Chhath Puja."
The second arghya is offered to the rising sun the next morning, at the same ghat, by the same family. This closes the 36-hour fast that began at Kharna, and the vratti (the person observing the vrat) eats for the first time since the previous evening.
Chhath is the worship of Surya, the Sun, and of Chhathi Maiya - a form of Shashthi Devi, protector of children and of a mother’s wellbeing. It is one of the very few major Hindu festivals with no idol: the deity worshipped is the visible sun itself, at the two moments - setting and rising - when it can be looked at directly. The vrat is kept most often by mothers, for the health, long life and prosperity of their children, though fathers, unmarried people and whole families keep it too, for the wellbeing of the household.
Its roots are in the Kosi-Mithila-Bhojpur region - today’s Bihar, eastern Uttar Pradesh, Jharkhand and the Nepal Terai - and it has travelled with that population to every city and country they have settled in, from Delhi and Mumbai to Mauritius, Trinidad, the Gulf and the United States. It remains, wherever it is kept, a festival without priests: the family performs every rite itself, at the water’s edge, in full public view of the ghat.
The vratti bathes, ideally in the Ganga or another river, and the household eats one satvik meal cooked in pure ghee - traditionally kaddu-bhaat (pumpkin and rice) with chana dal. This meal marks the start of purity for the household: no onion, no garlic, and increasing care in the kitchen from this point on.
A day-long fast without water, broken only after sunset. The vratti then prepares and eats rasiao-kheer (rice cooked in jaggery and milk) with roti and bananas, first offered to Chhathi Maiya. The moment this meal ends, the strict 36-hour nirjala (waterless) fast begins - it does not end until Usha Arghya the next morning.
The whole family carries the soop - bamboo winnowing trays heaped with thekua, seasonal fruit, sugarcane and coconut - to a river, pond or a specially prepared ghat. Standing waist-deep in the water, the vratti offers arghya to the sun as it sets. The evening is spent at the ghat in bhajan and community, often through the night.
Before sunrise the family returns to the same spot and offers the second arghya as the sun rises. This is when the fast breaks and the vrat concludes; prasad is distributed to family, neighbours and anyone present at the ghat, regardless of who kept the fast.
ॐ ह्रीं ह्रीं सूर्याय सहस्रकिरणाय मनोवाञ्छितफलं देहि देहि स्वाहा॥
ॐ सूर्याय नमः॥ ॐ आदित्याय नमः॥

Chhath itself is performed by the family, not by a priest, and that is worth keeping exactly as it is. If your reason for keeping it is your children’s wellbeing and you would also like a separate, priest-performed puja for that purpose, or a general nine-graha puja that includes Surya, these are the honest matches:
